Bobbin bakes The Classic Mince Pie

225g of cold butter (diced)
150g caster sugar
350g Plain Flour
1 Pinch of Salt
1 Small Egg (to glaze over the pies)
300g of good quality Mincemeat
Icing sugar to dust

Heat your oven to 200C / 180C Fan Oven.

1. In a mixing bowl combine the diced butter and flour and rub together with your fingers.

2. Add in the sugar and salt and continue to combine into a ball to be rolled out and cut into circles to make the base of the pies.

3. Add a teaspoon of mincemeat into each pie before cutting out another circle to be the top of the pie.

4. Brush the small egg over the top of each pie before placing in the oven for 20 mins.

5. Allow to cool and dust with icing sugar before grabbing a tea and eating one or too !
